Creamy Moroccan Lentil Soup

Yields 4 Servings

3 cups green lentils
6 cup chicken broth
1 onion chopped
2 garlic sliced thin
Pinch of salt to taste
2 Tbsp olive oil
1 heaping Tbsp Arabic Masala Spice (sold online)

Soak lentil overnight in water, rinse set aside. In a deep pot, add olive oil and fry onions and garlic til translucent. Add chicken stock and lentil, cook for 45 min til tender. Cool down and blend in blender or Vitamix. Add Masala spice and simmer for additional 10 min. Salt to taste
