Flattened Japanese Chicken Cutlet

2 organic chicken breasts
2 garlic cloves, minced
4 Tbsp olive oil
1 cup Japanese Panko bread crumbs (Trader Joe's has a great one)
2 eggs, beaten
Himalayan sea salt
Pepper

Take the chicken breasts but flatten them as thin as possible with a mallot (1/4-1/2 inch is fine).  Season with salt and pepper both sides. Dip in beaten egg mixture then cover with panko. On a large non stick frying pan, heat up olive oil with minced garlic. Do not burn garlic. Place chicken on hot skillet and cook till golden brown and chicken is cooked through around 8-10 min. Season with salt right before end. Absolutely delicious serves 2.
