Thomas's Kaiserschmarrn - Austrian pancake

1 1/4 cup flour
4 eggs seperated yolks and whites
3/4 milk
3/4 water
2 Tbsp orange liquor
1 1/2 tsp vanilla extract
3 Tbsp sugar
5 Tbsp melted butter
Extra butter for cooking

Mix all ingredients except egg whites with a mixer, til it thickens and is well mixed. In a separate bowl, beat egg whites till frothy. Take a spoon and slowly mix frothy egg whites into the batter. Heat a large nonstick frypan on medium heat with a tablespoon of butter. Fill the batter to the edge cook 2-3 minutes til golden. Then flip pancake and cook 2-3 min til golden. Once golden on both sides slice the cake into quarters then small 2 inch square pieces in the frypan. Add more butter then fry 2-3 more minutes. Serve cut up with macerated cooked strawberries and top with powdered sugar.

Macerated strawberries -
Slice 2 cups of strawberries add 2 tsp sugar, 1 tbsp orange liquor.  Cook on frypan til softened and slightly cooked. Save juice as a sauce for pancake.


Alternative is cooked and chopped apples fried with butter, sugar, rum and nuts as a topping
