Spicy szechuan chicken wings
3.5 lbs chicken wings
Canola or other vegetable oil for frying
½ cup Hoisin Sauce
½ cup honey
½ cup Sriracha*
½ cup blanched chopped black beans
¼ cup chopped garlic
1/8 cup chopped ginger
3 Tbs coarsely crushed Szechuan pepper corns
3 Tbs coarsely chopped fennel seed
3 Tbs coarsely chopped coriander seed
3Tbs sesame seed
1/8 cup sesame oil
1 cup plain yogurt
Fresh lemon juice and salt to taste
Chopped scallions and sliced English cucumber
Mix together all the ingredients for the marinade (starting with the hoisin sauce, through the sesame oil) the in a large bowl and set aside
In a small bowl, mix together yogurt, lemon juice and salt to your own taste and set aside
Rinse the chicken wings under cold water and pat dry with paper towels. Cut the tips off the wings and discard. Cut each wing into 2 pieces through the joint. (you can also purchase wings that have already been cut)
Fry the wings in about 2 inches of hot oil (350 degrees), place on paper towels to drain*
Toss in marinade, place on a platter, garnish with scallions, place cucumber slices around the platter, serve immediately with lemon yogurt sauce.
