Mama Mia Manicotti with Meat and Ricotta

½ lb ground beef and pork
10 large Manicotti noodle or Cannelloni (long circular tubes ready to fill)
2 tsp salt
½ tsp pepper to taste
1 package ricotta 250g
1 tsp dried Italian herb seasoning
½ cup Parmesan cheese
4 oz asiago cheese (optional)
1 ball buffalo mozzarella
1 med onion, chopped
2 tablespoon olive oil
2 cups ready tomato sauce
2 cloves minced garlic
Chili olive oil (optional)
Crushed red pepper flakes

Preheat oven to 350 degrees. Boil Manicotti noodles for 4-5 minutes till al dente but not too soft, cool. Heat frying pan first then add olive oil and 1 minced garlic, sauté onions and add ground meat till onion becomes translucent 5-7 minutes, add 1 tsp salt and pepper. Set aside and cool. Mix ricotta with mozzarella cheese, Italian seasoning, 1 tsp salt and pepper and ½ of the Parmesan cheese. Add cooled meat and with cheese and mix together. Add one layer of tomato sauce on an oiled baking dish 13x9x2. Carefully rinse Manicotti to prevent sticking and fill the cheese and meat mixture into a plastic bag, cut one end of the tip. Fill Manicotti with mixture and lay side-by-side on baking dish till full and top with the rest of the tomato sauce. Cover with remaining Parmesan cheese, asiago cheese, and crushed red pepper flakes and drizzle with chili olive oil. Bake in oven for 30-35 minutes till cheese topping is golden. Enjoy!
