Spicy Korean Kimchee Fried Rice
2 cups sliced Korean Kimchee
little kimchee juice
4-6 pieces of bacon sliced to 1 inch pieces
4 cups white rice, day old is better
1 egg
2 tsp sesame seed oil
2 tsp crushed sesame seed
Salt and pepper to taste
On a hot frying pan, cook bacon and kimchee for 5 minutes until cooked. Add rice and continue to stir fry all ingredients till well-mixed. Continue to stir fry 5 minutes add kimchee juice and 1 egg till rice becomes well seasoned and egg is cooked and the rice is dry not wet. Add pepper, sesame oil, and sesame seeds and cook 3 more minutes.
Tip: This is one of my easiest and favorite recipes, the bacon makes it so easy and seasoned. I also love to make an extra cup or two when I cook rice, I freeze the leftover 2 cups of cooked white rice and store in Ziploc bags. Take them out of freezer when I need it and keep them sealed, cook in microwave for 3-5 minutes till cooked, it comes out steamy and perfect, great for lazy people like me ☺
