Best Baba Ganoush

 1 large eggplant 

1/4 cup olive oil

1 Tbsp Tahini paste 

1 tsp cumin 

2 tsp salt 

2 minced garlic 

Split large eggplant lengthwise into 2, spread 1 tsp of olive oil and salt onto eggplant flesh. Flip over skim side up and place on nonstick pad. Bake 375 approx 30 min til flesh is cooked and steamed.

In blender, scoop up eggplant flesh and all ingredients blend til mixed. Add eggplant skin to blender for more texture. Enjoy serve with bread and other dips or kebabs.
