Quick pickled red onions

 1 large red onion

1/2 apple cider vinegar 

1 Tbsp sugar 

1 1/2 tsp salt 

1 cup warm water

Optional flavors: 

2-3 sliced garlic 

1/4 tsp peppercorns 

Few slices jalapeƱos 

Crushed dried red peppers 

Slice red onions thin and place in large mason jar. Whisk other ingredients with warm water til melted  and pour over sliced onions. Let sit for1 hour then refrigerate for few weeks. Keep leftover vinegar and use for salad dressings.
