Vegan churros
Yield: 40 pieces
¼ cup safflower oil
2 cups water
2 Tbsp sugar
1 tsp sea salt
2 cups unbleached flour
1 each zest of one
cinnamon and sugar for dusting
1. Combine oil, water, sugar and salt in a sauce pot on the stove and bring to a boil, stirring occasionally.
2. Remove from heat, ad the flour and lime zest. Stir vigorously with a metal spoon until the mix becomes a thick, smooth ball.
3. Let the ball cool, in the pan, until its warm enough to handle.
4. Using a piping bag with a star tip, pipe logs 3 to 4 inches long.
5. Chill before frying.
6. In deep fryer, or 350-degree oil in a pan, fry the churros until golden brown.
7. Drain on paper towels and roll in cinnamon and sugar before serving.
